Dr. Simeon holds a doctorate in Strategic Leadership from Regent University and a master's in human resources from Fordham University.

She served as treasurer on the board of the Women's Foodservice Forum, where she helped their mission to magnify powerful women, conversations, and growth.
A native of Puerto Rico, Dr. Simeon now calls Texas home, where she resides with her family.
